1. 食品功能成分对肥胖、脂肪肝、2型糖尿病等慢性代谢疾病的预防和改善作用

2.食品有害产物的产生和控制

3. 肥胖的发病机制,主要关注脂肪酸代谢产物的信号作用

4. 健康食品开发

3. 典型食品加工条件下特征动物生物活性物质多尺度结构变化与功能调控机制,国家重点研发专项子课题,参与;
